The menu reads like a love letter to Spanish tradition, reimagined with a contemporary sensibility. The cooking is slow, the ingredients are respected, and the fire is central. Start with dishes “con la mano” – a cecina croquette, or a lechazo empanadilla with mojo castellano. The “huerta” section highlights vegetables like asparagus with eel and oxidized pear, or artichokes with torreznos and egg yolk. Raw and marinated options include an oyster with wild tomato and chipotle, or cod in a cherry and beetroot aguachile.
The grill is a star: callos with fried eggs and chips, sea bass with cauliflower and chickpeas, or lechazo chops with black garlic and licorice. Two tasting menus, Tresbolillo and Rocalla, offer a curated journey through these bold, elegant flavors. Desserts stay on point with a 70% chocolate tart with bitter orange and burnt milk, or a panna cotta with pickled strawberries and roses.
This contemporary cuisine earned Caleña a Michelin recommendation, a nod to its ambition and skill. For warmer months, ÑaCa, their terrace, opens for relaxed evenings of wine, Gildas, and shrimp salad from Medina – a casual extension of the restaurant’s soul.
