Ansils: A Family Legacy in the Pyrenees

In the small village of Anciles, at the heart of the Benasque Valley, Ansils has been a fixture since 1984. What began as a mountain restaurant has evolved into a destination for contemporary cuisine that stays true to its roots. The restaurant is run by the third generation of the family: chef Iris Jordán, who took over the reins after learning in kitchens like Nakeima and Lakasa. Her connection to the valley is palpable in every dish.

Ansils earned a Michelin star in 2026, a recognition of its ability to translate the Pyrenean landscape into plates that are both refined and honest. The kitchen works with what the land offers, respecting the rhythm of the seasons and honoring local tradition. “We cook with the soul of the valley,” the restaurant states, and the menu is a direct expression of that philosophy.

The Experience

The dining room is intentionally intimate—only ten tables fill a restored old village house, making each visit feel personal. The cuisine is best experienced through one of two tasting menus, both conceived as a journey through the terrain. The Alta Montaña menu is a full narrative of seven courses (120 €), while the Monte Bajo offers a shorter, equally heartfelt version of four courses (95 €). Both begin with a welcome of small bites and end with two desserts and petit fours. A kids’ menu is available for younger guests, and the restaurant offers a carefully curated wine pairing and unique cocktails.

Contemporary Cuisine from the Mountains

Ansils’ style is contemporary but never disconnected from its environment. The team describes the menus as a route from the Congosto del Ventanillo to the high peaks, using local produce and techniques that reflect the region’s traditions. While the restaurant can adapt for allergies, it does not cater to vegan or vegetarian diets—the menus are designed as a complete, intentional experience. This commitment to a singular vision, combined with the warmth of a family-run establishment, makes Ansils a standout in Spain’s Pyrenean gastronomic scene.
