The story
On the beachfront of Agua Amarga, Asador La Chumbera has found its new home. Since 2025, the restaurant has been operating under the guidance of Chef Sylvain, bringing a refined approach to charcoal-grilled cuisine. The setting is striking: a terrace with the sea breeze, a cosy indoor area, and a view that makes the location feel like a destination in itself. It’s the kind of place that earned a Michelin Recommended award, and the recognition fits naturally with the care evident in every detail.
The menu is built around the grill. Specialising in high-quality meats, Asador La Chumbera offers a selection of matured cuts—from a 45-day aged entrecôte to a 70-day premium version, along with Chuletón from Alistana, Simmental, Frisona, and Maronesa. A dedicated ageing room is visible to guests. But the grill extends to seafood too: the day’s local catch includes langoustines, red tuna from the Almadraba, squid confit in olive oil, and whole turbot or sole cooked over the coals. The kitchen also prepares a steak tartare served on grilled bone marrow, roasted Camembert, and a range of starters such as Gilda, jamón de bellota, and a carpaccio of aged beef with black bread.
Local produce is a thread throughout. The “Ensalada la Chumbera” and a burrata with tomato in three textures are among the salads. A dedicated wine list, chosen by the chef, includes both by-the-glass and bottle options, covering everything from local vermouths to a fine Telmont champagne. The meal can finish with a selection of homemade desserts—a cheesecake with gluten-free biscuit, a reconstructed lemon pie, or a classic torrija with meringue ice cream.
The atmosphere is relaxed but attentive. The terrace is ideal for a sunset drink, while the interior offers a more intimate space. Asador La Chumbera is open for lunch and dinner, closed Wednesdays and for the month of November. It’s a place where the grill is the star, but the setting—right on the sand—makes the experience something more than a meal.
