In the small town of Casas Ibáñez, Albacete, Oba- is a restaurant built on a singular philosophy: to connect with its environment. The name itself is a nod to local history, borrowed from the Bonifanciano language—a universal tongue invented in the 19th century by a priest from this very village. In that language, Oba- means the root of the most essential human principles: spirit, instinct, soul, and thought.
The team, led by chefs Javier Sanz and Juan Sahuquillo alongside pastry chef Matías Arancibia, ferment specialist Nacho Alegría, and sommelier David Gallego, practices a form of culinary self-limitation. They choose to source almost exclusively from their surroundings, a personal and reflective approach that is both ethical and creative. Their menu is nourished by more than 45 local producers, supporting the recovery of endangered crops and native plants. This commitment to place underpins every dish of their modern cuisine.
The wine list is equally focused, featuring 250 references from small batches of fewer than 8,000 units. This careful curation reflects the same dedication to quality and origin found in the kitchen.
