The Menus

The dining experience centres on a six-course tasting menu (55€), with a shorter midweek option (36.50€) available Wednesday to Friday. Both begin with a snack and move through dishes like tomato with pickles, onion soup, and caviar lentils—a clever take on a local staple. For the main course, guests choose between cod in saffron pil-pil sauce or ribs with a mustard and honey glaze. Dessert is strawberries and cream, simple and precise.

For those who prefer to order a la carte, the menu expands with offerings such as foie terrine with sweet contrasts, morteruelo (a traditional Cuenca dish), salad of marinated pheasant and chicory, and a vegetable tripe that reworks the classic. From the sea, there is turbot with ‘Foyot’ sauce; from the land, confit suckling pig with quince, beef sirloin, or the ribs. Each dish is marked with allergens, and the kitchen notes its menus are not vegetarian or vegan by nature—a reflection of the product-driven, contemporary style.
