The story
Perched within the famous Casas Colgadas—the hanging houses that define Cuenca’s skyline—this restaurant is as much a destination for its setting as for its cooking. Chef Jesús Segura, a Cuenca native with more than two decades in the kitchen, leads the project that began in 2015 with Trivio. The space itself is described as “the most inspiring” for evolving that vision.
Segura’s cooking is grounded in research and reinterpretation of his surroundings. Memory and tradition are pillars in how he treats ingredients and understands the flavours that form part of the region’s collective memory. The result is contemporary cuisine that feels deeply rooted: each dish is a conversation with the land and the producers who supply it.
The restaurant offers two tasting menus that change with the seasons. “Cocinamos Cuenca” (We Cook Cuenca) is a 15-course journey through the present and the local environment, priced at €135, with a wine pairing at €65. “Volver” (Return) is a shorter, 10-course menu at €85 (€45 with pairing) that looks back to traditional recipes and products of the past—a way to move forward by remembering what came before.
This commitment to seasonality and sustainability earned Casas Colgadas a Michelin star, recognising the high quality of its contemporary cooking. The kitchen’s philosophy is simple: to cook Cuenca is a privilege. The boundary between urban and natural blurs in a city that mirrors what the restaurant seeks with its gastronomic proposal.
Dining here is an experience that respects both the product and the place. The menus are a direct expression of the environment, crafted with precision and a clear sense of identity. For those seeking a taste of modern Spanish cooking that honours its roots, Casas Colgadas Restaurante delivers with quiet confidence.
