The story
In the small mountain town of Ezcaray, population just over two thousand, El Portal de Echaurren stands as a landmark of contemporary gastronomy. Part of the century-old Hotel Echaurren, this restaurant was conceived as a space for unfettered creativity – an ambitious bet that put La Rioja on the fine-dining map. It was the first restaurant in the region to earn a Michelin star, and later the first to reach two.
The Echaurren story is a family one. Marisa Sánchez, awarded the National Gastronomy Prize for Best Chef in 1987 and the Medal of Merit at Work in 2008, built a legacy of traditional Riojan cooking that still lives on in the hotel’s other dining rooms. Her youngest son, chef Francis Paniego, took that inheritance and channeled it into something more conceptual at El Portal. “The best legacy a mother can leave her children,” the restaurant’s own site says of the recipes she passed down. Paniego’s cooking is rooted in that knowledge, but looks forward – a modern evolution of Basque and Riojan traditions.
El Portal’s menu is a tasting journey through seasonally driven, technically precise dishes. The kitchen works with local produce and a deep understanding of the region’s larder, presenting it in ways that are both surprising and deeply satisfying.
