In the small town of Jarandilla de la Vera, in the heart of Extremadura, Veratus has built a gastronomic project that is both modern and deeply local. The restaurant’s philosophy is clear: to highlight the cooking of its own land, recovering indigenous products and betting on local sourcing. This commitment to the region’s pantry has earned Veratus a Michelin recommendation and its first Repsol Sun, a recognition the team proudly celebrates.
The menu is a reflection of the seasons and the market. Guests can choose between two tasting menus: a concise 8-course option at 55€ per person, or a more extensive 12-course journey at 80€ per person. Both are served to the whole table and require a minimum of 24 hours’ notice. A wine pairing is available for each, with selections from the restaurant’s own bodega designed to complement the dishes.
The atmosphere is one of quiet confidence, letting the food speak for itself.
