The story
In Italian, gioia means both “joy” and “jewel.” At this Madrid restaurant, the name is no accident. Chef Davide Bonato and his partner Daniela have created a space where refined elegance meets lively, innovative cooking. The philosophy is rooted in a creative union between traditional Italian flavours and aesthetic ambition — reimagining the essence of old with new forms, colours, and textures. Every dish that leaves their “atelier” is handmade: pasta, bread, desserts, all crafted by meticulous artisans using premium raw materials.
Davide Bonato began his career at 16 in London, later honing his skills in high-end restaurants across Italy, the UK, and Japan. With over 25 years of international experience, he arrived in Madrid in 2015 to open Gioia. His cooking is a constant dialogue between tradition and innovation, where essential tastes of the past are reborn without losing their soul. The restaurant’s icon is the truffle — a jewel of the earth that symbolises sustainability and biodiversity, appearing in many of his creations.
The menu offers several ways to explore Bonato’s Italian cuisine. The Nesso tasting menu (the name means “the link that gives origin”) is a curated journey through his most personal dishes. For a lighter midday option, the Tre Volte Gioia executive menu (available Wednesday to Friday lunch) presents a three-course sequence: a traditional Piedmontese vitello tonnato, a choice between Carbonara by Davide Bonato or layered pasta with braised meat and morels, and a house tiramisù. Each bite is a small revelation — joyful, precise, and deeply Italian.
Gioia’s commitment to quality and creativity earned it a Michelin Recommended distinction for 2026. The recognition underscores what regulars already know: here, Italian cuisine is not just replicated but reinterpreted with intelligence and heart. The atmosphere is warm and welcoming, with outdoor seating and a calm, refined interior. Whether you come for the tasting menu or a leisurely lunch, Gioia delivers on its name — a true jewel of Madrid’s dining scene.
