Leading the kitchen is chef Adrián Collantes, a Madrilenian who has been cooking since he was 18 and was the right hand of Javi Estévez for years. After time in kitchens like El Mesón de Doña Filo, La Tasquería, and El Lince, and a stint in Australia, Collantes has returned to this address as a partner and head chef. His cooking is driven by memory and evolution, resulting in a living menu that recovers classics and proposes new ways to enjoy seasonal products with technique, respect, and a sense of humor.
This is a place where tripe is prepared over three days, and pork snouts are confit and fried before being crowned with a fabada foam. The cured and smoked tongue bikini has already earned its own fan club. But the menu goes far beyond offal.
