The story
Founded by Anabel, Raquel, Idoia, and Juan Miguel, the restaurant migrated from the village of Azagra in Navarra to the Spanish capital while keeping its agricultural ties intact. The team travels regularly to collect exceptional vegetables directly from local growers. This hands-on approach defines their regional cooking, where ingredients drive the menu rather than heavy sauces. Their commitment to sustainable sourcing earned them three radishes from the We're Smart Green Guide in 2026.
Artichokes and asparagus arrive at their peak, prepared with techniques that highlight natural sweetness rather than masking flavors. The kitchen also serves crystal peppers, a long-standing favorite that balances delicate texture with bright acidity. Meat dishes follow the same philosophy, drawing on the establishment’s asador heritage to deliver charred finishes and simple seasoning. Every plate reflects a straightforward dialogue between the harvest and the pan.
Architect Francisco Mangado designed the dining room to frame views of the street while maintaining an intimate scale for conversation. Wooden tables and soft lighting create a setting where guests feel immediately at ease.
