The story
La Mar Madrid by Gastón Acurio is, in the restaurant's own words, "a celebration of the sea, Peruvian cuisine, and life." It pays homage to the traditional cebicherías of Peru, drawing on the country’s extraordinary cultural diversity. The cuisine is a tour through Peru’s influences—Japanese, Chinese, Spanish, Italian, and Andean—all blending into what the team describes as some of the most vibrant cooking in the world. The restaurant’s Michelin Recommended status speaks to the authenticity and energy of this approach.
The menu showcases the breadth of Peruvian gastronomy. Guests can order from the trademark cebiche bar, where the day’s freshest fish meets leches de tigre in a rainbow of styles—from classic limeño to nikkei and chifero. Tiraditos, causas, and hot piqueos share the stage with dishes cooked in a charcoal-fired oven, including anticuchos and grilled seafood. The kitchen combines traditional flavors with innovative techniques, driven by a passionate team of chefs.
La Mar is designed as a fiesta. The experience extends beyond the plate to a carefully curated beverage program. Pisco, the cornerstone of the bar, appears in classic and creative cocktails, while a dedicated sommelier highlights South American wines. The service team provides warmth and hospitality, ensuring every visit feels like a celebration. With its lively dining room, outdoor seating, and bar, La Mar Madrid brings the spirit of Lima’s coastal cebicherías to the heart of Spain’s capital.
