The story
Since 1963, La Montería has been a steady presence on Calle Lope de Rueda, a place where the cooking speaks of roots and careful technique. The restaurant was founded by Juan José, who worked the bar, and his wife Mercedes, who ran the kitchen. They brought the flavours of Cazorla, Andalusia, and enriched them with the traditions Juan José encountered during his travels through Catalonia, the Basque Country, Navarre, and Galicia.
In 1987, their son Miguel Ángel Román took over. A self-taught cook who had been helping his parents since childhood, he turned his vocation into a career. The restaurant’s philosophy remains unchanged: the product comes first. The menu is built around game, slow-cooked stews, wild fish, and bluefin tuna prepared in a variety of cuts. Daily suggestions vary with the season and the chef’s inspiration.
This commitment to honest, ingredient-led cooking earned La Montería a Michelin Bib Gourmand in 2026, a recognition that rewards good quality at a reasonable price. It is a fitting tribute to a kitchen that has never chased trends, but instead refines the classics.
In 2018, the family opened La Monte just a few steps away, a more dynamic concept run by the third generation – Adrián Román – yet grounded in the same principles. At La Montería, the atmosphere remains that of a welcoming, traditional Madrid restaurant, where the bar and the dining room each offer their own experience. The wine list is well considered, and the service is attentive without being fussy.
