The story
Manifesto 13 brings a fresh perspective to Italian cuisine in the Chamberí neighborhood of Madrid. The menu reads like a creative manifesto—traditional Italian forms like pappardelle, ñoquis, and mezze maniche are reimagined with bold, unexpected ingredients. Loche squash meets goat cheese and vanilla; casareccia pasta is paired with a Peruvian-inspired parihuela broth, mussels, and sea fennel.
The kitchen draws on a wide palette: a tiradito of sea bream with lulo and green mango sits alongside a beef tongue anticuchera with beans, while a Milanese-style sea bass gets a Kaffir lime twist. Desserts stay inventive, too—chocolate with lucuma and sea lettuce, or a Tonka bean flan.
The cocktail program is equally ambitious. Drinks like the Rocoto blend mezcal with rocoto pepper, lemon, and Queijo Paria smoke; the Masa Madre uses sourdough with fino sherry. Each cocktail feels like its own small exploration of flavor.
Manifesto 13 has earned a Michelin Bib Gourmand for its good-quality, good-value cooking—a recognition of the kitchen’s ability to deliver refined, original plates without pretense. The atmosphere is warm and welcoming, and the outdoor seating makes it a lovely spot for a relaxed evening. It’s a place where Italian tradition meets curiosity, and where every dish and drink has a story to tell.
