A Bistró Born from Experience

In the heart of Madrid’s La Latina neighbourhood, chefs Pablo Sánchez and Lalo Zarcero have opened the doors of Marmitón. Their training reads like a map of European fine dining: stints at three-starred Hélène Darroze at The Connaught in London, the celebrated *El Corral de la Morería, and the vibrant Fismuler in Madrid. With that accumulated knowledge, they set out to create something more intimate—a place where the kitchen and the table share equal weight.

“La mesa y la cocina son espacios en los que todas las generaciones a lo largo de la historia han transmitido sus saberes,” the restaurant states. This philosophy of shared wisdom and shared plates defines Marmitón.

Contemporary Cooking, Rooted in Tradition

The menu at Marmitón is contemporary in spirit but grounded in classic techniques. The chefs recover traditional recipes and apply their own modern understanding to them. They change the carta frequently, working only with seasonal, locally sourced ingredients of the highest quality. Preservation methods such as fermentation, pickling, and smoking are central to their approach, adding depth and nuance to each dish.
