After more than 35 years in the restaurant world, Inmaculada Nuñez and Alberto Chicote have launched their most personal venture: Omeraki. The name itself evokes a sense of freedom – and that’s exactly what drives the kitchen here. The duo set out to cook without limits, without preconceived concepts, and with the liberty to change their menu every week. The setting is as ambitious as the cooking. Omeraki occupies nearly 700 square metres in Madrid’s Salamanca district, where indoor and outdoor spaces connect through a striking gastronomic library. Chicote’s personal collection of more than 1,400 cookbooks, wine and gastronomy volumes – amassed over four decades – lines the walls and is available for guests to browse. A curtain of aluminium links, designed as a large swirl, marks the entrance. Inside, high ceilings and two open kitchens – one at the centre of the dining room, another fully glazed at the far end – create an atmosphere that is both innovative and intimate. The architecture is sustainable, and the space feels like an oasis in the city.
