Sen Omakase: A Michelin-Starred Kaiseki Experience in Madrid

In the heart of Madrid, Sen Omakase offers a deeply personal interpretation of Japanese cuisine. Chef Steven Wu, who trained under master sushi artisans in Tokyo and later in Kyoto at the nine-generation Michelin-starred Uosaburo, brings the precision of Kaiseki and the spirit of omotenashi (Japanese hospitality) to every meal. This dedication earned the restaurant a Michelin star, a recognition of its high-quality cooking and unwavering respect for tradition.

The experience is built around a single, evolving omakase menu of 30 to 35 courses. True to Kaiseki philosophy, the menu follows the seasons with an almost poetic sensibility. Chef Wu honors Hashiri (the first, delicate arrival of a season’s ingredients), Shun (their peak flavor and abundance), and Nagori (a fond farewell until the next year). Diners move through four different rooms during the meal, each setting a new stage for the progression of sushi and Kaiseki preparations. The menu is priced at 220€ per person.

The liquid offering is equally considered, with over 250 references spanning from Burgundy to Japan, ensuring the wine and sake pairings match the kitchen’s meticulous approach.
