TAMPU: A Peruvian Perspective in the Heart of Madrid

On Calle de Prim, in the centre of Madrid, TAMPU offers a distinct take on Peruvian cuisine. The name, meaning “inn” or “resting place” in Quechua, sets the tone for a restaurant that feels both welcoming and refined. It is the vision of chef Miguel Valdiviezo, who has been building the Tampu brand for eight years, originally in the Prosperidad neighbourhood. His cooking has made the restaurant a reference point for Peruvian food in the city, a recognition underscored by its inclusion in the Michelin guide as a Recommended restaurant.

The dining room is designed for immersion. A main hall is divided by a large mirror to create a sense of both space and intimacy, while three private dining areas offer more secluded options. The decor, built around wicker and wood, plays with different volumes to define the spaces, all bathed in a warm, golden light. It is an environment intended to be savoured as much as the food.

Valdiviezo’s menu is a journey through the landscapes of Peru, told through a series of tasting experiences. The “Selección Gourmet” menu, priced at €60 per person, unfolds like a narrative from the coast to the mountains. It begins with a “soft sea breeze” of mejillón and navaja, moves through liquid croquetas de ají de gallina, and arrives at a Ceviche Pachamanquero. The story continues with dishes like codorniz with trufa and quinua, or cochinillo gallego-selvático, before ending with a lucuma ice cream and alfajores. A classic menu is also available, featuring a ceviche clásico de corvina and choices between lomo saltado and seco norteño.

The à la carte selection is equally compelling. Photographs from the restaurant show a hot prawn ceviche cooked on stone, a seco norteño of Iberian cheek, and Italo-Peruvian gnocchi, alongside the signature “Clásico de Tampu” ceviche. Each dish is presented with a clear, confident aesthetic that matches the cooking’s ambition. For a restaurant that has earned its place in Madrid’s competitive dining scene, TAMPU delivers a genuinely personal and technically accomplished version of Peruvian cuisine.
