Since opening in late 2017, Tres por Cuatro has been a steady presence in Madrid’s Salamanca district, earning a Michelin Bib Gourmand for its commitment to good quality, good value cooking. The restaurant’s philosophy is straightforward: let the best seasonal ingredients take centre stage, sourced directly from small producers across Spain. Fish from Cádiz, vegetables from Navarra — the market is their pantry, and the prices remain accessible.
The menu balances timeless staples with seasonal change. Regulars return for the torreznos, rossejat, tacos, croquettes, and callos, while rotating dishes reflect whatever is at its peak. Chef Álex Marugán describes the cooking as rooted in tradition but with a Latin-French twist — a style that brings warmth and surprise without pretence. “Mucho chup chup,” he says, referring to the slow-simmered love that goes into every pot.
