The story
At Yugo The Bunker, the philosophy is clear: unwavering loyalty to pure cuisine, committed to the nobility of raw materials without masking their authentic flavor. This dedication to quality, with no shortcuts, has earned the restaurant a Michelin Star, renewed year after year since 2019. It is a recognition of their passion for Japanese cuisine and their commitment to those who seek unique sensory experiences.
The restaurant offers two distinct ways to experience its food. The Classics menu (145€) is an anthology of the most celebrated dishes, a collection of bites that have earned their place. The Evolution menu (175€) is a more experimental proposal, a technical exercise that reflects a deeper understanding of each product, updated seasonally to embrace fresh, vibrant flavors. Both are accompanied by a carefully selected pairing of wines, sake, and Japanese craft beer.
The experience is shaped by two contrasting spaces. The lower floor, The Bunker, is a faithful reproduction of a Japanese bunker—a rebellion against a fast-paced world, designed for intimate, magical moments where senses can focus on the most subtle flavors and textures. Above, the Izakaya Tavern draws inspiration from the casual, street-side atmosphere of a traditional Japanese tavern, offering a more relaxed yet equally refined setting. Both spaces are designed with an intimate and magical atmosphere, ideal for sharing.
Behind every detail is a kitchen team that works in symphony, supported by the RomeroArtero design studio, ensuring nothing is left to chance. The search for the best ingredients is a global pursuit, from Alaska to Japan, prioritizing exclusivity, safety, and total freshness. This commitment to excellence ensures that every dish, from the Otoro Nigiri with Smoked Osetra Caviar to the Seasonal Mushroom Shumai, honors the purity of its components. Yugo The Bunker is a place where technique and emotion meet, delivering a memorable Japanese dining experience in the heart of Madrid.
