The story
In the heart of Marbella's old town, where the sea and the mountains face each other, Candeal is the personal project of chef Pablo Rebollo. Born in Valladolid and a cook by trade, Rebollo opened Candeal in June 2023 with a simple, honest idea: to rescue tradition and look at it with fresh eyes. The restaurant's Mediterranean cuisine is built on product, time, and memory—a reinterpretation of the Castilian recipe book, made with respect and creativity.
Fire, ferments, and stocks sustain every dish at Candeal. The menu is a tribute to the stews of old, to escabeches, and to the game flavors that marked Rebollo's memory, all reinterpreted with a contemporary gaze and absolute respect for the raw material. The kitchen practices a cuisine of "aprovechamiento" (making the most of everything), giving added value to elements that would normally be discarded. Each preparation seeks balance: flavor as the starting point and also the destination.
Bread is central to the Candeal experience. The restaurant learned directly from the master baker who originally supplied them from Peñafiel (Valladolid), nearly 800 kilometers away, and now bakes its own loaves with the same dedication. Two varieties are offered: Candeal de cuadros, with its dense crumb and unmistakable flavor, and torta de aceite de Peñafiel, also called torta de coscoja de semillas—crisp and full of nuance. Each piece is a tribute to artisan baking.
This commitment to quality and authenticity earned Candeal a place in the Michelin Guide Spain, recognized as a Recommended restaurant in 2026—a testament to Rebollo's vision of a cuisine that seeks to move from the simple, where roots and essence coexist with a contemporary perspective, never losing the truth of the origin.
