The story
In the heart of Morón de la Frontera, Cal Viva brings together tradition and fusion in a celebration of intense flavour. The kitchen is built on seasonal, market-fresh produce from nearby farms, rooted in the classic cooking of the Campiña sevillana yet open to new techniques and ingredients from around the world. Legumes, small game, tagarninas, and wild asparagus take centre stage in dishes like confit cod on a stew of pig trotters with judión beans. The result is a menu that feels both deeply local and quietly adventurous.
Cal Viva is driven by three people who share a passion for good food and wine. Leonardo Ramos, a self-confessed gastronomy obsessive, leads the kitchen and also selects the wines as sommelier. Teresa Gómez brings over thirty years of experience from her own restaurant, "El Paraeño," and is described as a tireless worker and a pillar of the project. Julio Domínguez, who previously worked with Ramos at DeÓ Sevilla, brings his love of gastronomy and travel to the front-of-house, ensuring every guest feels welcomed.
The wine cellar is a fundamental part of Cal Viva. With more than eighty labels chosen with care and knowledge, it invites exploration and thoughtful pairing. The restaurant describes itself as an enoteca as much as a restaurant, and the wine list is designed to accompany each dish with character and harmony. This dedication to both food and wine has earned Cal Viva a place in the Michelin guide, recognised for its honest, flavour-driven cooking and warm hospitality.
Open for lunch Tuesday through Sunday and for dinner on Friday and Saturday evenings, Cal Viva is a place where the land speaks clearly, and the glass is always full.
