The story
In the coastal town of Bakio, just 25 minutes from Bilbao, Zintziri Errota occupies a singular space: a restored ethnographic museum where a working corn mill still grinds flour as it did long ago. The restaurant sits in a natural depression between the Jata, Garbola, and Sollube mountains, a microclimate that once produced some of the finest txakoli, citrus, and asparagus in Bizkaia.
The dining room is intimate and enveloped by a collection of traditional Basque artifacts, making every meal feel like a visit to a cultural archive. Outside, a landscaped terrace surrounds a pond fed by the mill’s own water, a setting that has made the restaurant a sought-after venue for weddings and events since its opening in 2003.
The kitchen is led by Dogartzi Izagirre, whose cooking is firmly rooted in local tradition and the freshest seasonal ingredients. The menus change with the seasons, offering dishes such as a creamy mushroom and vegetable stew with a yolk, or merluza on a mussel cream. For larger celebrations, the wedding menus are elaborate affairs, featuring cocktails, Ibérico ham, homemade foie, and grilled langoustines, all paired with local txakoli and Rioja wines.
The restaurant’s commitment to quality and sense of place has earned it a Michelin recommendation, a recognition woven into the experience of dining here. The Kuku Lore menu, a tasting of the season, is a direct expression of this philosophy: Basque haute cuisine served without pretension, in a space that honours the past while cooking for the present.
