The story
On the outskirts of Murcia, in the El Palmar district, Cabaña Buenavista is the domain of chef Pablo González Conejero. This is a restaurant where the cuisine is a direct expression of the surrounding region, a philosophy that has earned it two Michelin stars and three Repsol Suns.
Chef González’s approach is rooted in a deep respect for local ingredients and traditions. He has created the first gastronomic Living Lab in the Region of Murcia, a collaborative project with the IMIDA research institute. This living laboratory is dedicated to recovering forgotten native varieties of fruits and vegetables, which are then cultivated and integrated into the kitchen. It is a tangible commitment to sustainability and a bridge between Murcia’s agricultural past and its culinary future.
The dining experience unfolds across two tasting menus. The Menú Olivo offers a journey through the garden and the Living Lab, progressing to the main cabin for six courses, a Murcian cheese selection, and two desserts. The more extensive Menú Experience expands the savory sequence to nine courses, with three desserts to finish. Both menus are available with a carefully curated wine pairing.
Dinner begins with aperitifs in the garden before moving into the lab for a series of inventive bites. The meal continues in the main space, where the kitchen’s precision and creativity are on full display. The final act takes place on the terrace, with a sweet tour of the region. This movement through different spaces is integral to the experience, each setting designed to highlight a different chapter of the meal.
