The story
In the whitewashed hill town of Olvera, La Tarara opened during the first weeks of the pandemic. Two locals, long away from home and trained in some of Spain’s best kitchens, decided to build their most personal project. The result is a restaurant rooted in the traditions of the Sierra de Cádiz, but treated with a contemporary eye.
The cooking here is built on respect for product and place. The menu draws heavily on local ingredients—olive oil, vegetables, meats from the surrounding countryside—with occasional nods to other regions of Spain. It is not fussy, but it is precise. The kitchen updates classic flavours without losing their soul, and the presentation is clean and deliberate.
Wine is a pillar of the experience. La Tarara offers a strong selection of sherries and manzanillas from nearby Jerez, alongside wines from further afield. The bar is a good place to start, with counter dining that lets you watch the team work.
The space itself matches the food: simple, welcoming, with outdoor seating on the plaza for warmer months. The restaurant earned a Michelin Bib Gourmand in 2026, a recognition for good quality, good value cooking that feels exactly right here. This is not a place for spectacle—it is a place for eating well, in a town that deserves a stop.
