The story
In the small village of Cosgaya, at the foot of the Picos de Europa, the Rivas family runs Hotel del Oso. Their restaurant is a direct expression of the valley: the cooking is rooted in local products and the traditions of Liébana. The kitchen focuses on traditional dishes, carefully selecting ingredients from the surrounding region. This commitment to quality and authenticity earned Del Oso a Michelin Bib Gourmand, recognizing its good quality, good value cooking.
The menu reads like a tour of Lebaniego home cooking. The famous Cocido Lebaniego is a slow-simmered stew of chickpeas, cabbage, pork, beef, and a local stuffed meatball, all sourced from the comarca. Manitas rellenas (stuffed pig’s trotters) are prepared with patience, resulting in a soft texture and deep, traditional flavor. A simple jamón salad provides a fresh, balanced counterpoint. For dessert, the homemade apple tart is a guest favorite—delicate and traditional—while the creamy arroz con leche is caramelized on top and served with ice cream for a contrast of hot and cold.
The restaurant is part of a hotel built in the local mountain style, with hand-worked wood and stone. The atmosphere is warm and authentic, reflecting the family’s long-standing care for their products and service. Whether you choose to eat indoors or on the outdoor terrace, the experience is one of genuine hospitality in a spectacular natural setting.
