The story
Arrels sits in the old town of Sagunto, climbing toward the castle, inside the former stables of the Palacio de los Duques de Gaeta, a 16th-century medieval palace. The dining room preserves two Gothic arches, one Mozarabic and one Romanesque – a rare architectural heritage that the team has paired with a clean, contemporary decor, creating a space that feels both storied and welcoming.
Chef Vicky Sevilla opened her first restaurant, Arrels, at 25. Her cooking is born from memory, territory and product, reinterpreting Valencian roots with rigour and creativity. She has taken part in events such as Quique Dacosta’s DNA Festival and Gastronoma Valencia. In 2026, Arrels was awarded a Michelin star, a testament to its refined, market-driven modern cuisine.
The kitchen works with fresh, seasonal produce, changing the menus weekly to reflect what is best. Guests can choose from several formats: the à la carte menu (72 €) includes a welcome snack, two starters, a main course and a dessert; the Saba menu (120 €) expands to six savoury courses and two desserts; and the Arrels menu (148 €) is the fullest expression, with eight savoury courses and three desserts. Both tasting menus can be paired with wines, and vegetarian versions are available. Note that on Saturdays and holidays only the Arrels menu is offered, and the Saba and Arrels menus are served only until 15:00 or 22:00.
Every dish is guided by three principles: memory (cooking from respect for tradition), craft (meticulous care in every detail) and identity (each plate speaks of who they are). The result is a cuisine that feels personal, deeply rooted in the Valencian landscape, and thoroughly contemporary – a true reflection of the restaurant’s name, which means “roots” in Catalan.
From the historic arches to the precise, honest cooking, Arrels offers a meal that is both grounded and inventive. It is a place where the past and present meet on the plate, and where the flavours of the region are expressed with clarity and emotion.
