In the small village of Villaverde de Pontones, near Santander, Jesús Sánchez and Marián Martínez have built a restaurant that feels both deeply local and quietly groundbreaking. Cenador de Amós holds three Michelin stars, a distinction that places it among Spain’s most celebrated dining rooms. But the team’s own words capture it best: this is a place where “every detail is born from respect for the origin and the passion for excellence, creating a cuisine that moves, evolves, and stays in the memory.”

The restaurant’s modern cuisine is rooted in the landscape of Cantabria. Sánchez describes his style as “a subtle, fresh style of cooking that gives equal prominence to plant-based and animal-based ingredients, creating a perfect balance between the two.” The sea and the mountains meet on every plate. The signature tasting menu, the Cantabrian Collection 2026, is a journey through that terroir. Dishes evolve with the seasons and the market, but the intention is constant: “pure and distinct flavours, locally sourced produce with a global vision.”

The experience is shaped by the people behind it. Chef Jesús Sánchez is described by his team as “an artist who channels all his creativity into his dishes, as if they were a canvas.” His curiosity and relentless search for the truth of flavour are matched by Marián Martínez, the restaurant’s owner and director. With over three decades of experience, she has driven the restaurant toward sustainability—earning a Michelin Green Star and pioneering initiatives like the first Solar Community in the gastronomic sector. Their shared project is one of “excellence as a path.”

The dining room itself is intimate, with space for private parties and outdoor seating in good weather. The wine list is carefully curated, and table service is attentive without being intrusive. The restaurant is closed in January and February, and bookings are taken Wednesday through Sunday. It is a place that asks for time—the full experience unfolds over two to three hours.

Cenador de Amós is not a restaurant that shouts. It works quietly, with precision and a deep sense of place. For those who make the journey to Cantabria, the reward is a meal that feels both timeless and entirely of the moment.
