The story
La Bicicleta takes its name from a simple truth: “We have all ridden one at some point. You have to pedal hard if you don’t want it to fall. And every part counts.” That metaphor runs through everything here – a kitchen that moves forward with steady, deliberate effort, where each element on the plate has a reason to be.
Situated in the quiet village of Hoznayo, just outside Santander, this modern cuisine restaurant has earned a Michelin star and two Repsol Soles – recognition that speaks to the precision and personality of its cooking.
The tasting menu is called La Grande Boucle, a nod to the Tour de France. Guests choose between a reduced version of 18 courses (150€) or an extended version of 21 courses (180€). The progression is designed to feel like a journey, with each course building on the last. The restaurant’s own words describe the project as “financed by the ministry of foolishness, illusion and determination” – a playful way of saying that passion, not convention, drives the kitchen.
La Bicicleta doesn’t stop at the plate. The team runs a farm project at Moncobe in nearby Riotuerto, where they raise pigs. This connection to the land is evident in the ingredients and the care taken with each dish. The restaurant also has its own pastry shop, and offers a range of spaces for private events, outdoor seating, and even a chef’s table.
After 15 years in business, La Bicicleta continues to roll forward – a testament to the idea that every part of the machine, from the kitchen to the farm to the guest, has to work together.
