The story
At Yain, the kitchen balances avant-garde techniques with a deep respect for tradition. The team describes their cooking as "the reflection of our land and our traditions," working exclusively with local suppliers and seasonal ingredients. Bacalao, a specialty of the interior, is prepared using the old-fashioned method of desalting, just as grandmothers did. Meats come from animals raised in Aragón, sourced for maximum quality. The menu changes regularly, and a midday menu is offered at 20€ on weekdays and 30€ on weekends, including first course, second course, dessert, water, and bread.
The team is small and conscious of the importance of those around them. Led by Raúl Igual in the dining room and Iñaki Cubas in the kitchen, they work together to grow and evolve, offering a personal service that makes each visit feel special. The two private salons, Alabastro (20 seats) and Silex (10 seats), allow for an intimate experience, whether for a business lunch or a celebration. Groups of ten or more can request a customized menu, with options ranging from 40€ to 60€ per person, showcasing dishes like ternasco de Aragón "a la pastora" and turbante de bacalao.
