The story
Restaurant vRÅ sits at Drottningtorget in Gothenburg, just beside the central station, inside Clarion Hotel Post. The name “vRÅ” means a nook or corner – and that is exactly the feeling the team wants to create: a space that is both familiar and a little exciting, where you can have one foot on the Swedish west coast and one in Japan.
The menu focuses on seafood and vegetables, with ingredients that are almost always local. The inspiration and methods, however, are drawn largely from Japan. This fusion approach is not about mixing for the sake of it – it is a deliberate, respectful dialogue between two coastal culinary traditions. The kitchen follows the seasons, letting nature decide what comes through the door, so the menu changes with the time of year and can even vary from day to day.
vRÅ has been recognised with a Michelin Recommendation, partly for its uncompromising commitment to sustainability. The restaurant operates a zero-tolerance policy on social issues and runs an organic rooftop garden with the Odlingsbolaget Svalan collective. Kitchen waste is fermented using the bokashi method and turned into soil for the garden – a local circular system that transforms tonnes of food scraps into new vegetables without leaving the hotel.
Every ingredient is traceable. Fish and shellfish come from safe, wild stocks or trusted farms. Meat is sourced from producers who let animals live as naturally as possible. Vegetables are picked from the hotel’s own rooftop or from nearby organic farms. Even the beverages reflect this ethos: alcohol-free pairings and cocktails are built from kitchen leftovers such as pear cores, dill stalks and apple peels.
The restaurant’s Japanese inspiration extends to the drinks menu, which features a notable sake list with categories from Daiginjo to specialty and fruit liqueurs. The atmosphere is designed to make guests feel well taken care of and comfortable – and hungry, of course. Whether you come for a full evening or a lighter meal, the team aims to give each guest a fantastic experience.
vRÅ’s fusion of local Swedish bounty with Japanese precision, all wrapped in a deep commitment to sustainability, makes it a standout in Gothenburg’s dining scene.
