From Cannon Foundry to Kitchen

The iron works at Hälleforsnäs was founded in 1659 to cast cannons. Over the following four centuries it grew into one of Europe's largest foundries, producing everything from artillery to kitchen stoves. Today, people make the trip for a different reason: to eat well. Hälleforsnäs Bruksrestaurang occupies the first floor of a functional 1930s building on the old foundry grounds — practical rather than grand, but carrying the full weight of that industrial history.

Chef Axel Johnsson and the Hyper-Local Pantry

Head chef Axel Johnsson has built the menu around an unusually tight circle of producers and suppliers, many of them immediate neighbours. The eldost — a local cheese — travels no more than ten metres vertically to reach the kitchen; the dairy that makes it operates one floor below the restaurant. Pike-perch comes from Lake Hjälmaren, bleak roe from Lake Mälaren, and beef for the brioche burgers is sourced from Herrgölet in nearby Mellösa. This is Swedish cuisine taken seriously at the ingredient level, not just in name.

What to Expect on the Plate

The kitchen runs an open format, and the menu moves comfortably between comfort food and more considered cooking. The Sörmländsk löjrom pizza — bleak roe on pizza, a combination that sounds unlikely and has become the restaurant's best-seller — sits alongside butter-fried pike-perch with horseradish, Caesar salad, fried camembert and crème brûlée. Homemade bread arrives with whipped brown butter; cutlery is served in anchovy tins. Small details that signal genuine care without performing it.

Recognition and Setting

White Guide has recognised Bruksrestaurangen in its 2026 edition, noting the quality of local produce and the warmth of the service — a fair summary. The dining room is bright and a little sparse, which keeps the acoustics lively, but the staff are attentive and the food more than compensates. Once upon a time, the ironworks in Hälleforsnäs was one of Europe’s largest, and for 400 years everything from cannons to iron stoves was produced here. For history enthusiasts, there is therefore plenty to discover, and in recent years the site has also attracted gourmets. In the works restaurant, located one floor up in the more functional than grand 1930s building, head chef Axel Johnsson serves local delicacies such as Hjälmar Lake zander, Lake Mälaren roe, and fire cheese from Jürss. The latter could hardly be more local, having traveled just ten meters vertically, as the dairy is situated one floor below. From the open kitchen come both comfort food dishes and fluffy brioche burgers made with meat from Herrgölet in Mellösa, the best-selling Södermanland roe pizza, and classics like pan-fried zander with horseradish, Caesar salad, fried camembert, and crème brûlée. The dining room is a touch too bare and unadorned to exude coziness, but the friendly and efficient staff, along with thoughtful touches like homemade bread with whipped brown butter and cutlery served in anchovy tins, more than make up for it.
