The story
Restaurang Fyr in Halmstad delivers refined Swedish cuisine along the coast, where chef Jacob Holmström has translated years of international training into a focused kitchen practice. After leading Stockholm’s Gastrologik to two Michelin stars and earning a spot at the 2023 Nobel Banquet, he returned to his hometown to build this project alongside his wife, Emelie Leijon. The kitchen now operates under a White Guide Masters recognition, marking his latest chapter. Holmström channels his Paris and Oslo apprenticeships into straightforward technique rather than heavy ornamentation.
The dining room follows an à la carte format that separates snacks, raw preparations, and cooked shellfish into distinct segments. Guests encounter local charcuterie and cheese boards before moving to crudo, ceviche, or sashimi drawn from a morning chill cabinet. A dedicated shellfish course highlights oysters and grilled langoustines prepared directly over the open fire. Warm plates balance roasted turbot with chicken wing jus, root celery purée, and salted citrus, while dessert rounds out the evening with four rotating sweet stations and freshly churned ice cream.
The venue takes its name from the nearby Tylön lighthouse and the visible flame burning through the kitchen pass. Floor-to-ceiling glass frames the water, allowing diners to watch the tide while ordering drinks from the front-row bar. Jacob and Emelie designed the space to feel grand yet approachable, prioritizing steady hospitality over formal distance. The combination of natural light, timber surfaces, and direct ocean sightlines keeps the atmosphere grounded throughout service.
