In the quiet Swedish countryside of Hyltebruk, an old sawmill beside a rippling river has become one of the country’s most compelling dining destinations. This is Knystaforsen, a restaurant that earned a Michelin star for its high-quality cooking and deeply personal approach to modern cuisine.
The space was originally the home of Eva and Nicolai Tram, and they treat every guest like family. There are few rules here, except one: making sure you feel at home.
Cooking at Knystaforsen happens outdoors, over flames and embers. It is, as the team describes it, “sensuous and impractical, in the best sense of the word.” The experience is as much about camaraderie around a campfire as it is about enjoying a meal seasoned with the visceral thrill of its unhurried preparation. Fire, the primordial culinary art, provides sustenance for the soul too.
Over the course of four hours, guests are treated to a terroir-driven tasting menu that celebrates the wild nature surrounding the restaurant. Ingredients are plucked from rivers and lakes, foraged in the woods, or sourced from local purveyors offering wild game and artisanal products. This is modern cuisine rooted in a specific place—the lake, the forest, and the river.
The tasting menu is the heart of the experience, with prices varying by day: 2,650 SEK on Thursday, 2,750 SEK on Friday, and 2,850 SEK on Saturday. Beverage pairings are equally considered, with options ranging from non-alcoholic juices and kombuchas (1,250 SEK) to a more classic wine selection (2,550 SEK). A “Wondrous” pairing combines non-alcoholic tipples with highlights from both wine selections (1,950 SEK). The restaurant also offers accommodation for those who wish to stay the night.
From November 13th to December 31st, 2026, Knystaforsen will take up residence in the Japanese Pagoda at Tivoli Gardens in Copenhagen. There, they will offer an immersive sensory journey shaped by open-fire cooking, inspired by the same landscapes that define their cuisine.
