The story

Tivedens Mat, Karlsborg – French-Swedish Cooking Deep in the Swedish Forest

The Restaurant in the Forest

Tivedens Mat calls itself "krogen mitt i skogen" — the inn in the middle of the forest — and the description is entirely literal. Reaching Källdalen outside Karlsborg requires commitment; GPS struggles, and the surrounding Tiveden wilderness offers no urban shortcuts. That guests have been making the trip for more than twenty summers says everything about what awaits them.

French-Swedish Cooking, Written on a Chalkboard

The menu changes with the season and is presented on a large slate board — no printed card, no fixed formula. Over two decades, Tivedens Mat has built its identity around a French-Swedish kitchen: honest technique, generous portions, and produce that reflects the landscape. Tapas to share arrive first, followed by dishes like crispy-fried vendace from Lake Vättern with a sharp remoulade, peas and browned butter, or a robust lamb tenderloin provençal. Vegetarian options and half portions are always available. The wine list is short and broad, with a good selection by the glass.

White Guide has recognised Tivedens Mat for exactly this quality: cooking that is generous and well-executed without unnecessary elaboration. The owner runs the kitchen alone; the front-of-house team is warm, personal and entirely on top of things.

A Barn, a Terrace and Plenty of Time

The dining room occupies a warm, rustic barn. Outside, a terrace looks directly into the forest — unhurried and genuinely quiet. The rhythm here is slow on purpose. Evenings tend to stretch, ending with a pot of well-brewed tea and a rich chocolate truffle in the last of the summer sun. Tivedens Mat is open seasonally from May through late September, welcoming guests from Friday to Sunday in shoulder season and extending to five days a week at the height of summer.

The tavern is truly nestled deep in the forest, and you can barely rely on GPS to guide you there. Once you arrive, you're greeted by a relaxed and rustic neighborhood tavern. The fact that groups have been making the pilgrimage out here for 16 years is proof enough of the restaurant's appeal—and we completely understand why. The dining room, housed in a barn, feels warm and inviting; the outdoor terrace overlooking the forest is deeply relaxing, and simply nothing much happens—in the best possible way. The owner runs the kitchen single-handedly, while the cheerful, personal service delivers drinks and platters with effortless confidence. The French-Swedish menu is written on a large chalkboard and offers something for everyone, while the wine list is short yet broad, with many selections available by the glass. Guests often start with tapas to share, followed by crispy-fried vendace roe from Lake Vättern with fresh remoulade sauce, peas, and brown butter. Or, if you prefer, a hearty Provençal-style lamb loin. Everything is generously portioned and expertly cooked, without any unnecessary frills. Diners happily linger through the evening sun, sipping a pot of well-brewed tea and finishing with a rich chocolate truffle. Indeed, this is a place where you have plenty of time to enjoy life.
