The kitchen here works with a 12-course tasting menu that traces the eight Sami seasons experienced in Swedish Lapland. Every dish is built around local, seasonal ingredients, often prepared using techniques like curing, smoking, drying, and pickling – methods that were once essential for survival in this harsh climate and now serve to highlight the purity of the produce. The cooking is honest and straightforward, letting the ingredients speak for themselves. The menu changes with the seasons, and a vegetarian version is available.
This approach to Swedish cuisine, rooted in the landscape and traditions of the North, has earned the restaurant a "Very fine level" rating from the White Guide. The guide notes that at Icehotel, “the restaurants take over the show” come evening – and The Veranda is a key part of that shift, offering a genuinely reflective dining experience after a day spent exploring the ice art and wilderness.
