The story
At the tip of the Långenäs cape, just outside Göteborg, Signum is a place where the landscape shapes the plate. The restaurant sits within the grounds of Hällsnäs Hotell, but its kitchen operates with a rare independence — sourcing almost entirely from its own micro-farm, a larger vegetable garden on the property, and a sea farm north of Fjällbacka that supplies seaweed. This self-sufficiency is not a marketing angle; it is the foundation of the cooking.
The menu follows the Nordic seasons, offering around 18 servings — sometimes more, depending on what the season provides. Fish and seafood take the lead, with supporting elements from the vegetable patch, the farm, and the wild Swedish landscape. The kitchen is open, both physically and in philosophy. Ingredients dictate the direction of each dish, and many are finished over an open fire, always with precision and respect.
The result is cooking that feels both elemental and refined — a clarity of flavour that has earned Signum two Michelin stars. The recognition is a natural extension of a kitchen that grows its own herbs, leafy greens, and edible flowers year-round, preserves summer harvests for the colder months, and works closely with a network of farmers and fishermen who share the same commitment to quality.

Signum is open Wednesday to Friday from 18:00 and Saturday from 13:00. Reservations are essential.
