The story

Gustav Grill & Bar: Award-Winning Swedish Grill in Mora

The kitchen and the philosophy

Gustav Grill & Bar in Mora approaches Swedish cooking with a commitment to honesty and ambition, preparing every dish from scratch. The Swedish kitchen prioritizes local produce, centering the menu around Swedish meats rather than importing proteins. Fresh bread arrives daily from a neighboring bakery to complement these robust preparations. This dedication to foundational ingredients earned the venue a Fine Level recognition in the 2026 White Guide.

Dishes from the mountains

Local fjällko anchors the menu, appearing as a focused tri-tip steak or crafted into a hearty burger. The kitchen prepares lamb shanks by baking them overnight, then coating the tender meat in a teriyaki glaze that adds sweetness without masking the flavor. These recipes come straight from the main list, making them accessible choices on the dedicated children's menu as well. Every plate reflects the kitchen's insistence on building meals from the ground up.

A rustic gathering place

The large bar exudes a relaxed atmosphere where skiers, cyclists, and families gather comfortably after their activities. Staff monitor the room closely, ready to move tables instantly if guests prefer a quieter corner away from the bustle. Drafts flow from Sälens Fjällbryggeri, supplying crisp house beers brewed on-site to accompany the meal. Wednesday evenings bring a music quiz to the pub area, keeping the energy lively throughout the season.

Would you rather sit over there?" The waitress instantly noticed that a few in the group had frowned slightly at being seated among the noisy families with children. Another table is quickly arranged. That’s pretty much how we work – people of all kinds and ages should enjoy themselves here. It’s a great place to hang out in the large, rustic bar, whether it’s after skiing, after cycling, or if you simply want a cold beer. Since Gustavs also brews several different varieties under the Sälens Fjällbryggeri label, the drink options are excellent. In the restaurant section, they live up to their mission statement of "honest and ambitious cooking from scratch". Unlike many other grill places, they primarily use Swedish meat. When the local mountain cow is on the menu, either as tri-tip or a burger, it’s an obvious choice. Just like the overnight-baked ham hocks with teriyaki sauce, which are also nicely included on the children's menu.
