The math at 800 Grader is straightforward: two ovens, each running at 400 degrees Celsius, equals 800 degrees of combined heat. The menu is equally unambiguous — four pizzas, chalked up on the wall, which may rotate over time but never expand beyond that number. In a city full of restaurants that try to do everything, this Vasastan pizza spot has built its reputation on doing very little, very well.

The Room, the Crowd, the Pizza

Walk in and you'll find communal tables, a space that feels something like a school common room — compact, relaxed, entirely without pretension. Someone's waiting in the corner with their jacket still on, picking up a box. A couple of friends are sharing a plate of nduja, cooled with fresh mint. And somewhere in the middle of it all, someone has their eyes closed over a margherita — proper buffalo mozzarella, a crust that's charred and blistered at the edges in that particular way only a very hot oven produces.

White Guide has taken note, recommending 800 Grader and singling out details like the cavolo nero with kumquat citrus and well-balanced Aleppo pepper — the kind of precision that shows the limited menu is a considered choice, not a shortcut. The drinks list follows the same logic: a funky natural wine, a golden apple cider, a locally brewed beer — all of it at home alongside the pizza.

What started on Sigtunagatan has since grown to Kocksgatan on Södermalm and, more recently, Adelsgatan in Visby. At those addresses, the pizza is also available by the slice. The Vasastan original remains the template: a neighbourhood pizza place where the neighbourhood actually shows up, and where four options on a chalk board turn out to be more than enough.

2 x 400 = 800. We're talking number of ovens and degrees. Add to that the number 4, which stands for the number of pizza varieties available to choose from. They may vary over time, but are always just four. Communal tables. The menu chalked on the wall. The space resembles a middle school lounge, only smaller. Someone's hanging out in a corner with their jacket on, waiting for the takeaway box containing cavolo nero with a black cabbage crunch, a citrus kick from kumquats, and well-balanced Aleppo pepper. A couple of friends are tucking in right there on a hot nduja with cool mint. Meanwhile, the slow-savorers close their eyes for each of the Margherita's tender buffalo mozzarella chunks and the crisp, dark-bubbled crust. A funky glass of wine, a golden apple cider, a freshly brewed berry tea – everything pairs perfectly with everything. And everyone in the neighborhood fits right in here. 800 degrees can also be found on Kocksgatan in Söder and last summer on Adelsgatan in Visby; at those locations, you can also buy the pizza by the slice. How nice!
