Origins and the Roasting Philosophy

Primafila has served expertly crafted Italian espresso in Stockholm since opening its doors in 2002. The founders spent years traveling through Italy searching for a roaster that matched their standards for transparency and social responsibility. Their search ended with Bernardo and his Caffe del Doge operation, which he acquired in 1993 before joining the Specialty Coffee Association Europe. They now import that specific green bean profile and roast it locally, tuning the grind size daily to pull shots with consistent body and sweetness.

The Daily Menu and Pastry Selection

A rotating weekly menu keeps the kitchen offerings fresh, while the core selection relies on straightforward Italian cuisine. Guests typically order grilled sandwiches layered with regional cheeses and cured meats, paired with house-baked cakes that arrive warm from the oven. The pastry program leans heavily on classic dolci, offering rich textures that balance the bright acidity of their signature Italian coffee blend.
