The well-known Fredrik Eriksson, a champion of traditional Swedish home cooking, is behind the museum restaurant, where today’s lunch is served all day. Quality is Fredrik’s hallmark, whether in the ambiance, the details, or the food. The poached salmon is tender, silky, and melts in your mouth. It is served with yellow beetroot, wax beans, leeks, and thinly sliced blanched radishes. Small, firm, freshly boiled new potatoes and crisp pickled cucumber accompany it. And then the best part: a dill-infused, airy, cloud-light mayonnaise. Elegant and utterly delicious in its simplicity.
