When Rolf Nilsson, Rolf Dürr, and Guy Taylor opened the doors in 1989, the open kitchen was a genuine provocation. Today, White Guide still rates it at a very fine level, noting with barely concealed admiration that after more than three decades, almost everything that mattered is still intact.

The Room That Made the Place

The interior is the story. Cleverly designed tables — the work of architects Bohlin and Sandell — accept drop-in leaves that expand a two-top into an eight-person table in moments. Chairs hang on bolts fixed to a raw brutalist concrete wall. Dala-blue joinery frames the space and keeps it warm against all that exposed structure. It is a room that rewards attention, and it has not been softened or updated into anonymity. White Guide's reviewers put it plainly: the founders are no longer there, the café au lait has become a latte, but the room and its atmosphere remain as they were.

Thirty-two years old—you’d never guess it! When Rolf Nilsson and Rolf Dürr, together with Guy Taylor, served their first raw fish cakes in the then ultra-modern and sensationally open kitchen, heaven only knows if they suspected that most of it would still be intact a third of a century later. They themselves are no longer around, and the café au lait has changed its name to latte, but the interior—with its Bohlin- and Sandell-inspired clever tables where extension leaves transform a two-seater into an eight in no time, where chairs hang on bolts against the brutalist concrete wall, and the Dalarna-blue woodwork frames the space and adds warmth—all of that remains. Parts of the clientele are still here too, in fact, gradually mingled with new generations and constantly refreshed by a steady stream of guidebook-savvy foodies.
