Italian at Heart, Swedish at Soul

The kitchen focuses on Italian flavors with deliberate nods to Swedish produce and thinking. Burrata arrives with grilled portobello, rosemary, apple, and shaved truffle — its scent drifting across the room before the plate even lands. Grilled dorada comes white and firm, tasting, as one reviewer put it, of a Greek summer. The vongole pairs beautifully with August Kessler's riesling, exactly as the staff will tell you it does. And the tiramisu — light, airy, properly made — closes the meal without heaviness.

Alongside the main kitchen, Brillo runs its own pizza counter, turning out inventive pies that stand on their own.

Sustainability runs quietly through the operation: the group maintains its own fish-cleaning facility, and a clear equality policy shapes how the kitchen is run. These are commitments that don't make it onto the menu but inform everything on it.

A Room Worth Sitting In

The interior was designed by Jonas Bohlin, whose pared-back aesthetic sparked a new wave of restaurant design across Stockholm. White tiles, marble surfaces, classic café furniture, and carefully chosen art. One floor down, Dan Wolger's sculpture Nattfiskaren — The Night Fisherman — hovers above the cooks at work. It is worth the trip downstairs.

As the evening moves forward, the music rises and the room fills. By late night, Taverna Brillo is loud enough that conversation becomes optional. That, too, is part of what it offers.

Brillo isn't cheap, but you get your money's worth – the food is well-prepared and flavorful, and the portions are generous. The focus is on Italian flavors with a touch of Sweden. The ingredients are carefully selected, backed by a deep-rooted commitment to sustainability that extends from the group's own fish-cleaning facility to an explicit gender equality policy in the kitchen. The burrata is served with grilled portobello and topped with rosemary, apple, and grated truffle, whose characteristic aroma drifts throughout the entire venue. The grilled dorade is white and firm in texture, tasting of a Greek summer. Many wines are available by the glass, and August Kessler's riesling elevates the flavors in the house vongole, just as the waiter promised. They also offer inventive pizzas from their own pizzeria. We can barely hear what we're saying, so it's best to quietly enjoy the light and fluffy tiramisu to finish the meal.
