It is a true pleasure to visit the restaurant in the cultural center Väven in Umeå. We are impressed by how they deliver top-notch quality year after year and constantly refine and develop the details. The awareness of the food's origin is exceptionally high here, as evidenced not least by their own vegetable gardens. Plant-based dishes also take up a prominent place on the menu. With only a couple of different meat or fish options, it is the seasonal greens that truly shine. Whether grilled, smoked, pickled, seared, or fresh, the vegetables coexist on the plate like an impressionist painting. But don't think Gotthards has become a vegan spot – the meat is carefully selected from the local butcher and the whole animal is fully utilized. Yet one wonders if the greens aren't still stealing the show. Through its small, exquisite details, we marvel at how a humble carrot can feel so complete and utterly satisfying. Another aspect that Gotthards excels at is the element of surprise. As the meal progresses, new components and flavors emerge. This is most apparent in the desserts, which are cleverly constructed in layers of flavor and texture. They begin light and airy and conclude at the bottom of the plate with deep flavors, crunch, and a touch of salinity. The beverage selection stands out; particularly the pairing recommendation for the pluma, Pardas Sus Scrofas from Penedès, is a standout combination. The ambiance feels more like an Italian piazza than a cultural center in Norrland, and the murmur of guests popping into the delicatessen right next door, checking into the hotel, or visiting the city library only enhances the atmosphere. So too does the chef-free staff; without them, Umeå's heart simply wouldn't beat.
