The story
Hambergs has held its place on Uppsala's gastronomic map since 1982, occupying a spot by the Fyrisån river at Fyristorg that feels both lived-in and quietly special. What makes it unusual is the combination under one roof: a proper fishmonger selling the day's catch alongside a restaurant and bar where that same catch lands on your plate hours later. Guests who step in to buy fish often end up staying for a glass at the bar — and that easy overlap between shop and dining room gives Hambergs an atmosphere that is genuinely hard to manufacture.
Not everyone who tries for an authentic French bistro atmosphere pulls it off. Hambergs does. The menu keeps fish at its centre throughout, with no steak in sight — and none needed. The cooking is straightforward and confident: halibut served with clarified butter, baked egg yolk and grated horseradish; sole accompanied by brown butter, capers and chopped beetroot. These are dishes that trust their main ingredient rather than obscuring it. When the raw material is this good, that restraint is exactly right.
Plateau de fruits de mer have a way of appearing on the small tables here — towers of shellfish that make an occasion of a midweek lunch or a Friday dinner alike. The bar is a destination in its own right, and the fact that fishmonger customers drift in from the shop side adds a relaxed, neighbourhood energy that a purely formal restaurant rarely achieves.
