The story
In the small village of Estavannens, just outside Bulle, Auberge des Montagnards operates as a true village bistro. The kitchen works “hand in hand with the small producers next door,” sourcing organic fruits and vegetables from the Fribourg region. Every dish is entirely homemade, certified by the Swiss Label Fait Maison. This commitment to local, seasonal ingredients is the foundation of the cooking.
The menu changes with the seasons, offering a short but carefully composed selection. On Thursdays and Fridays, a fixed-price lunch menu is available—recently featuring a grilled courgette gazpacho followed by roast pork with gratin Dauphinois and persillade. The à la carte list includes a roasted cauliflower with sérac cream and cumin, a beef tartare with pickled shallots, and a fillet of trout from nearby Neirivue, served meunière with brown butter and verjus. Desserts stay true to the region: meringues with double cream and rhubarb, or an île flottante with walnut praline and hay-infused crème anglaise.
The restaurant’s relaxed, convivial setting—with options for outdoor seating and takeaway—makes it a natural gathering place for the community.
