The story
La Pinte des Mossettes in Bulle anchors its Swiss alpine cuisine in a dedicated commitment to regional terroir. Chef Nicolas Darnauguilhem earned the 2025 Green Chef of the Year title from Gault&Millau by building his kitchen around a self-tended garden and strict product traceability. He sources cattle from Pascal Tercier in Charmey, alpine lamb from Sapalet farm, and cheeses directly from Yvon Brodard’s facility just a few hundred meters away. This hyperlocal procurement keeps the mountain cooking grounded while allowing precise control over every ingredient that reaches the table.
Guests follow a fixed five course progression that shifts regularly according to what the seasons dictate. A welcome broth arrives alongside rillettes du Léman and pickled hogweed before the kitchen moves into potato and squash noodles paired with a rich crayfish bisque. Later courses feature shredded duck with haricots secs, followed by confit of Pêche du Léman resting in a beurre noisette sauce. The meal concludes with quince and shiso or their famous pumpkin seed soufflé served alongside caramel and cannelé.
The dining room maintains a cellar stocked with over six hundred references that prioritize Swiss vineyards and biodynamic estates. Sommeliers draw heavily from growers like Thierry Cevey and Pierre Morey to complement the robust regional cooking without overwhelming it. Non alcoholic guests can choose from sage Espelette infusions or cold brew blends steeped with tomato and chamomile ice cubes. A curated cheese flight from affineurs Mauerhofer rounds out the evening with a focused lesson in Deutschschweiz varieties.
