The story
Osteria Bisnona in Contone grounds its menu in strict organic principles and seasonal Ticinese cuisine. Chefs Kira Ghidoni and her husband Fabien built their careers across London, Australia and New Zealand before returning to Kira’s hometown to open this space. Their culinary practice follows a zero-waste ethic, which Kira describes using the local phrase “a sa büta via nagot.” This disciplined approach earned them early recognition from Gault&Millau as a notable discovery in the region.
The menu shifts with the harvest, highlighting techniques that turn simple vegetables into precise plates. A mandoline slices kohlrabi into paper-thin carpaccio, served alongside house-made stracciatella crafted from fresh organic mozzarella. Gnocchi pair with Corvino polenta from the Maggia Valley, finished with apple, nuts and a foam of local blue cheese. Rigatoni carry a finely chopped luganighetta ragout topped with crispy fried rice. These constructions anchor a refined organic kitchen that respects seasonal limits.
Natural light fills the dining room while tables are arranged to encourage conversation among guests. The kitchen partners directly with nearby growers who share a commitment to biodynamic farming and minimal transport distances. Every plate mirrors the current harvest, moving from spring greens to autumn roots without forcing artificial flavors. This steady alignment with local agriculture keeps the service grounded and the pacing relaxed.
