The story
Since 2020, chef Romain Dercile and maître d’hôtel François Gautier have been at the helm of La Fleur de Sel in the heart of Cossonay. One in the kitchen, the other in the dining room, they carry forward the gastronomic heritage of their predecessor Carlo Crisci, a celebrated figure in Swiss cuisine. The restaurant is a Bib Gourmand recipient, recognised by Michelin for good quality, good value cooking, and also holds a notable 17 points from Gault&Millau.
Dercile’s cooking is creative and generous, built on carefully sourced local produce that changes with the seasons. Each menu is conceived as a sincere experience, balancing rigour, emotion, and respect for the terroir. The result is modern French cuisine that feels both refined and accessible.
The restaurant offers several ways to dine. The main Fleur de Sel menus present a gastronomic journey through the region’s best ingredients. For a more intimate experience, the Table Héritage is a dedicated space where an exclusive, multi-course tasting menu is served. The signature “Héritage” menu—priced at 188 CHF—reads like a poem: feuilletés, an ode végétale, a variation of langoustine with fir buds, Simmental veal in two services, and textures of strawberries with elderflower and agastache, among other courses. Midday, the restaurant also serves a simpler menu du jour, with a choice of plat, gourmand, or gastronome formulas that include a starter, main, dessert, and a glass of wine.
