Paul Cabayé, a 2021 Golden Cook winner and former pupil of Michel Giovannini, brings rigorous French craft to a menu defined by local provenance. He treats plating as an extension of the landscape, garnishing dishes with wild flowers he collects himself, such as cumin blossoms for fish courses and yarrow for poultry. His approach prioritizes ingredient integrity over excess, creating a kitchen where Swissness meets exacting standards.

Signature preparations

The menu highlights precise textures and layered flavors, beginning with a mini-tartare of Simmentaler beef served on butter brioche with tarragon mayonnaise. A chilled gazpacho blends cucumber, apple, and kaffir lime alongside raw zucchini tartare and caperweed glaze, offering a refreshing start. Main courses feature intense pairings like salmon trout accompanied by a table-poured broth of mushrooms and seaweed, or grilled duck finished with fermented cherry jus and baby aubergine gel. Desserts remain light, exemplified by a summer pavlova topped with sour apricots, verbena cream, and elderflower.

Alpine heritage and interiors

The property dates to 1864, originally built near the Unterergletscher where ice harvesters once unloaded their loads at what was then called Endweg, or the end of the road. The building evolved from a simple sheep barn into a grand establishment, retaining a connection to its origins within contemporary interiors. Guest rooms feature COCO-MAT® mattresses, hardwood flooring, and design elements reflecting mountain patterns in soft charcoal and blue tones. The unpretentious dining room provides a relaxed setting for the cuisine, complemented by an extensive wine program.
